At STATE Grill and Bar at the Empire State Building, classic dishes harken back to the way food used to be made — from the perspective of a modern restaurant.

Watch your food being prepared in the open kitchen by our chefs, who gather inspiration from the eastern part of the Empire State and its bounty of market ingredients, from the Hudson Valley to the North Fork.

Meet Chef Morgan Jarrett

Raised in rural Texas, Chef Morgan developed an early appreciation for food sourcing and agriculture. She began her culinary career while in college and later moved to New York to study at the French Culinary Institute of America in Manhattan under Jacques Pépin and Alain Sailhac.

Chef Morgan’s New York experience includes working with Chef Robert Newton and Kerry Diamond of Cherry Bombe, where she helped launch multiple farm‑driven restaurant concepts rooted in neighborhood hospitality. She later served as opening chef for Yellow Magnolia Café at the Brooklyn Botanic Garden, overseeing planting coordination and seasonal programming for major events such as the Annual Spring Gala and Cherry Blossom Festival.

Most recently, at STATE Grill and Bar, Chef Morgan has focused on sustainable partnerships with producers such as Afterlife Mushrooms and Marsh Hen Mills, supporting the Empire State Building’s environmental initiatives, including its rooftop beehives.
